Skillet Spinach
Skillet Spinach is an moderately easy dinner. Made with 1 lb. fresh, raw spinach, 1 tbsp. bacon grease, 1 c. cooked pork or ham, chopped (optional), 1 tsp. vinegar and 1 egg, beaten, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Rinse spinach thoroughly and trim stems.
If leaves are very large, tear in half.
Shake to dry.
In a very large skillet, heat bacon grease on medium-high heat, then add pork or ham and brown slightly.
Turn heat to low and add vinegar.
Mix egg with half and half and stir into skillet.
Add spinach, a skilletful at a time, letting it cook down while stirring until more can be added. Continue until all the spinach is used.
Sprinkle scallion over top and stir until last batch of spinach is wilted.
Salt and pepper to taste and serve immediately.
Makes 4 servings.
