Skillet Kraut
Skillet Kraut is an moderately easy dinner. Made with 1 slice salt pork (3 x 1 x 1/4-inch), 1 tbsp. oleo, 1 medium onion, coarsely chopped, 1 (1 lb.) can sauerkraut (undrained) and 1/2 c. water, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Cut salt pork into small pieces.
In 10-inch skillet over low heat, brown the salt pork, stirring occasionally.
Pour off fat. Remove salt pork.
Melt the oleo over low heat.
Add onion and cook, stirring often, until golden.
Add sauerkraut, water, brown sugar, vinegar and salt pork.
Cover and simmer until liquid has evaporated, about 1/2 hour.
This is especially good when served with picnic foods or buffet foods.
