Skillet Cornbread
Skillet Cornbread is an moderately easy dinner. Made with 2 strips bacon, 1 large egg, 2 c. buttermilk, 1 3/4 c. cornmeal and 1 scant tsp. baking soda, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Preheat oven to 450Β°.
Brown bacon in a cast-iron skillet. Leave 2 teaspoons of bacon grease in skillet and put it in the oven as it preheats.
Mix eggs, buttermilk and cornmeal to form a thin batter.
Add baking soda, baking powder and salt.
Pour batter into hot skillet.
Return skillet to oven and bake for 15 to 20 minutes until cornbread begins to brown on top.
Turn out of the loaf by inverting the skillet over a large plate and serve hot.
