Shrimp Salad is an moderately easy dinner. Made with 2 1/2 c. cooked rice, 1 1/2 tsp. lemon juice, 1/2 c. celery, chopped, 1 1/2 c. cooked shrimp and 3/4 c. mayonnaise, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Combine mayonnaise, lemon juice and curry powder, mixing well. Combine shrimp, celery, onion and rice.
Stir in mayonnaise mixture; toss lightly.
Garnish with tomato wedges.
