Shrimp Mosca
Shrimp Mosca is an moderately easy dinner. Made with 1 lb. fresh shrimp in shells, headless, 2 bay leaves, 1/2 tsp. oregano, 1/4 tsp. rosemary and 1/2 tsp. thyme, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Saute shrimp with herbs and spices in olive oil, stirring regularly, until shrimp are almost done.
Add wine or stock and simmer over very low heat for about 5 minutes, until liquid is about half cooked down.
Serve in shells with lots of paper towels or dampened napkins.
