Shrimp Con Queso
Shrimp Con Queso is an moderately easy dinner. Made with 2 to 3 lb. cooked, peeled shrimp (i use 2 lb. bag from sam's), 1 box white rice, 10 to 12 oz. velveeta cheese (i use bag of shredded), 1 can ro-tel and 1 can celery soup, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Saute green onions, celery and green bell pepper in margarine.
Add Ro-Tel (I use mild) and cream of celery soup.
Add cheese and simmer, then add the cooked shrimp.
Serve on white rice.
