Shrimp Bisque
Shrimp Bisque is an moderately easy dinner. Made with 1 1/2 lb. peeled and deveined, cooked shrimp, chopped fine, 3 c. milk (room temperature), 3 tbsp. sherry, dash of nutmeg and 6 tbsp. butter, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

In double boiler, melt butter and onion.
Gradually add milk and shrimp.
Cook for 2 minutes.
Slowly stir in light cream. Heat, but do not boil.
Add sherry, parsley or chives, nutmeg, salt and pepper.
Blend well.
