Prepare your favorite meat loaf mixture.
Spread mixture in bottom of large cast-iron skillet or 9 x 13-inch baking pan. Cover meat loaf with mashed potatoes.
Prepare cornbread mix and pour batter over mashed potatoes.
Bake at 350Β° for 1 1/2 hours.
