Shepherd's Pie
Shepherd'S Pie is an moderately easy dinner. Made with 1 lb of lean ground beef or ground turkey, 1 small onion, chopped, 1 cup or small can of mixed vegetables (leftovers will do), or you can add chopped vegetables of your choice . . . celery, pepper, carrots, etc. and 2 tbsp. flour or cornstarch, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Brown meat in iron skillet.
Before meat is done add onion and other vegetables.
Continue cooking for a few minutes, adding salt and pepper to taste.
Little bits of leftover tomato add color and flavor.
In a cup or small bowl make a roux with the flour and a small amount of water.
Add to meat mixture and continue cooking until a small amount of gravy thickens in the mixture.
Spoon mashed potatoes over the top and place skillet in 375Β° F. oven for 20 - 25 minutes or until mashed potatoes are beginning to brown on top.
Serve with a big spoon and let everyone help themselves. Great with buttered rolls and maybe a small salad.
