Shahi Pilaf
Shahi Pilaf is an moderately easy dinner. Made with 4 c. basmati rice, 1 stick butter or clarified butter, cinnamon stick, crushed, 2 bay leaves and 6 pods cardamon, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Wash the rice and set aside to drain.
Heat the butter in a nonstick pan.
Add cinnamon stick, cardamon pods, bay leaves and cloves and stir for 1 1/2 minutes.
Add salt and water (8 cups) to rice, then bring to boil, stirring it a couple of times.
Reduce heat to low.
Add raisins, almonds and pistachios.
Cook, covered, for 10 minutes.
Serve piping hot.
