Seven Minute Icing
Seven Minute Icing is an moderately easy dinner. Made with 1 1/2 c. sugar, 2 egg whites, 5 tbsp. water, 1/8 tsp. cream of tartar and 6 large marshmallows, cut in small pieces, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Put all ingredients, except vanilla, in top of boiler.
Stir until well mixed.
Place over simmering, but not boiling, water. Cook, beating constantly with electric mixer at high speed, for about 7 minutes, or until icing becomes stiff and glossy.
Remove from heat and add vanilla.
Stir until blended.
