Make sure all ingredients are dry.
In a large bowl, start with lettuce, then red peppers, green onions, celery, fried bacon and sweet peas.
Spread mayonnaise on top of peas.
Sprinkle sugar on top of mayonnaise.
Layer with cheese, then top with bacon. Top with olives, if desired.
Chill for 4 to 5 hours.
