Mixture can be used on lettuce, slaw, red beets in a can.
Measure beet juice and add water to equal 1 cup.
Add cider vinegar and sugar.
Bring mixture to a boil.
Remove from heat.
Pour over red beets and refrigerate overnight.
Eat cold or heat.
