Seafood Crepes
Seafood Crepes is an moderately easy dinner. Made with 2 lb. raw shrimp, cleaned and cut in small pieces, 1/4 c. chopped green onion, 1/2 c. dry vermouth, 2 c. cream or half and half and 2 tbsp. cornstarch, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Saute shrimp and green onion in butter.
Add 1/4 cup dry vermouth and cook down for sauce; set aside.
Pour 1/4 cup dry vermouth in pan and boil down to 1 tablespoon.
Add 2 tablespoons of cream to cornstarch, whisking.
Add 2 cups of cream, minus 2 tablespoons to sauce.
Add 1/2 cup Swiss cheese to melt.
Add 1/3 cup of sauce to shrimp mix.
