Scalloped Corn
Scalloped Corn is an moderately easy dinner. Made with 2 c. cooked corn, 1 small onion, chopped, 2 tbsp. margarine or butter, 2 tbsp. flour and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Cook and stir onion and green pepper in 2 tablespoons margarine until onion is tender; remove from heat.
Stir in flour, salt, paprika, mustard and pepper.
Cook over low heat, stirring constantly, until mixture is bubbly.
Remove from heat.
Stir in milk gradually.
Heat to boiling, stirring constantly.
Boil and stir one minute.
Stir in corn and egg.
Pour into ungreased one-quart casserole dish.
Mix crumbs and one tablespoon melted margarine, sprinkle over corn.
Cook, uncovered, in 350Β° oven until bubbly, 30 to 35 minutes (4 servings).
May fold 1/2 cup shredded natural Cheddar cheese into the sauce mix.
