Scalloped Corn
Scalloped Corn is an impressive dinner. Made with 1 (16 oz.) can or 1 lb. whole corn, 10 oz. frozen corn or 4 ears corn, 1/4 c. chopped onion, 1/4 c. green pepper, chopped, 1 scant tsp. salt and 2 tbsp. butter or margarine, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cook and stir onion and pepper in 2 tablespoons butter until tender.
Remove from heat.
Stir flour and seasonings.
Cook over low heat until bubbly.
Remove from heat.
Gradually stir in milk and egg.
Pour into greased 1-quart casserole.
Combine cracker crumbs and 1 tablespoon butter.
Sprinkle evenly over corn mixture.
Bake, uncovered, 30 to 35 minutes at 350Β°.
Yields 4 to 6 servings.
