Scalloped Corn
Scalloped Corn is an moderately easy dinner. Made with 4 c. fresh or frozen corn, 3 eggs, beaten, 1 c. milk, 1 c. crushed saltines (about 30 crackers), divided and 3 tbsp. melted margarine, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In a large bowl, combine the corn, eggs, milk, 3/4 cup cracker crumbs, margarine, sugar, onion, salt and pepper. Transfer to a 1 1/2-quart baking dish.
Sprinkle with remaining cracker crumbs.
Bake, uncovered, at 325Β° for 1 hour or until a knife inserted near the center comes out clean.
