Sandy's Rainbow Jello
Sandy'S Rainbow Jello is an easy dinner. Made with 1 small pkg. jell-o in flavor of choice for each layer desired, 1 c. boiling water for each pkg. of jell-o and 1/4 slice of 1/2 gal. vanilla ice cream for each layer desired, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Mix hot water and Jell-o until Jell-o is completely dissolved. Add ice cream and stir until it has melted.
Pour into mold or bowl.
Let the Jell-o/ice cream mixture set up (approximately 20-30 minutes).
Repeat this process with different flavors.
Just before serving, turn the mold over onto a plate or platter.
The rainbow will release from the mold easily.
Garnish with mint leaves.
