Salmon Loaf
Salmon Loaf is an moderately easy dinner. Made with 3 large onions, diced, 1 bell pepper, diced, 2 stalks celery, diced, 2 large cans pink salmon and 4 large eggs, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Saute onions, bell pepper and celery in small amount of oil until the vegetables are limp.
Open and drain 2 cans of salmon. Put in mixing bowl and take off as much skin and center bones as you can.
Mash salmon and add eggs.
Add vegetable mixture; blend well.
Add cracker crumbs.
Add salt, pepper, onion powder and garlic powder to taste.
Add extra egg.
Spray a 9 x 14-inch Pyrex dish with Pam.
Put mixture in.
Bake about 1 hour at 350Β°.
