Salmon Creole
Salmon Creole is an moderately easy dinner. Made with 1 (1 lb.) can red salmon, 1 small onion, chopped fine, 1 green pepper, chopped fine, 1 (1 lb.) can tomatoes, drained and 2 eggs, slightly beaten, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Remove bone and skin from salmon and flake.
Combine all ingredients, except bread crumbs.
Melt margarine in saucepan. Add bread crumbs and stir to coat.
Add half of crumbs to mixture and combine.
Turn into 9 x 9-inch greased casserole pan. Sprinkle with remaining crumbs.
Bake at 350Β° for 45 minutes.
