Salmon Cakes
Salmon Cakes is an moderately easy dinner. Made with 1 can salmon, 1/2 c. chopped onion or scallions, 1 large egg, beaten, 1 slice toast, shred to crumbs and 1 tbsp. honey dijon mustard, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Drain and remove center bone from salmon.
Break up thoroughly. Mix in onion, toasted crumbs, seasonings to taste, egg and honey Dijon.
Form small to medium patties.
Coat with corn meal. Skillet brown patties in vegetable oil.
Makes about 8 medium cakes.
Great with pasta.
