Salmon Ball is an moderately easy dinner. Made with 1 lb. can red salmon, 1 (8 oz.) cream cheese, 2 tbsp. lemon juice, 1 tsp. lemon rind and 1 1/2 tbsp. grated onion, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Drain salmon; remove skin and bones and flake with fork.

Mix cream cheese until creamy.

Add lemon juice, lemon rind, onion, spices, Worcestershire sauce and pepper.

Stir in flaked salmon.

Add salt if more is needed to taste.

Combine chopped pecans and parsley and spread on waxed paper.

Form salmon into ball and roll in nut mixture, until coated on all sides.

Makes 10 servings, and may be made a day ahead.

Serve with favorite crackers.
