Salami
Salami is an moderately easy dinner. Made with 5 lb. ground beef, 4 tbsp. tender quick curing salt, 2 1/2 tsp. coarse pepper, 1 1/2 tsp. mustard seed and 4 tsp. liquid smoke, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Mix all ingredients together and knead as for bread for 5 minutes.
Knead each day for 3 days.
On the 4th day, shape into long logs, approximately 3 rolls each recipe.
Place on a jelly roll (or shallow) pan.
Bake 8 hours at 125Β°.
Turn once after 4 hours.
Cool and refrigerate.
Best if placed on a wire rack in pan when baked.
