Saint Nicholas Cake
Saint Nicholas Cake is an moderately easy dinner. Made with 2 1/2 c. flour, 2 tsp. baking powder, 1 c. butter, softened, 2 tsp. rum or brandy extract and 1/2 c. raisins, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Remove 2 tablespoons flour and mix with fruit and nuts. Combine remaining flour, sugar, baking powder and salt in a large mixing bowl.
Stir well to blend.
Add butter, milk and extract. Blend on low to mix, then 2 minutes on medium speed.
Add eggs and beat 2 minutes.
Stir in floured fruit and nut mixture.
Turn batter into greased and floured Bundt pan or tube pan.
Bake at 350Β° for 55 to 60 minutes.
Frost with glaze or icing sugar.
