Rotel Chicken is an moderately easy dinner. Made with 4 to 6 chicken breasts, boiled and deboned, 1 can cream of chicken soup, 1 can cream of mushroom soup, 1 can cheddar cheese soup and 1 can diced ro-tel tomatoes, this recipe delivers authentic, satisfying flavors. Boil chicken until tender; let cool.
Saute onion and bell pepper in butter until tender.
Mix soups and tomatoes together; add bell pepper and onion.
In large casserole dish, break chips to cover bottom.

Microwave 20 minutes on High; break up more chips in casserole dish and cover chips with cheese.
