Rosy Relish
Rosy Relish is an moderately easy dinner. Made with 1 1/2 c. apple cider vinegar, 2 3/4 c. sugar, 1 tbsp. salt, 1 (3-inch) stick cinnamon and 2 tbsp. mustard seed, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Combine vinegar, sugar, salt and seasonings and bring to rapid boil.
Add fruit and vegetables.
Simmer until fruit thickens and clear.
Add few drops of red coloring.
This takes quite a while and must be stirred often, especially towards the end or it will scorch and that ruins flavor.
Makes 2 pints.
Don't make more than two batches at a time.
Put in hot, sterilized jars and seal.
