Rock Cakes
Rock Cakes is an moderately easy dinner. Made with 1 1/2 c. self-rising flour, 1 egg, 1/3 c. butter or margarine, scant 1/3 c. milk and 1/2 c. raisins, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Sift the flour into a medium sized bowl.
Cut in the butter or margarine until it resembles breadcrumbs.
Add the dry ingredients, a little grated nutmeg and the egg, well beaten.
Add the milk, being careful not to make the mixture too moist.
Put in small heaps on a greased cookie sheet.
Bake at 425Β° for 15 to 20 minutes.
