Ricotta Cake
Ricotta Cake is an moderately easy dinner. Made with 1 (18 1/4 oz.) yellow cake mix (the kind with pudding in it), 2 lb. ricotta cheese, 2 tbsp. vanilla, 1 1/2 c. sugar and 6 eggs, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Prepare cake mix according to package directions.
Pour into a greased and floured 13 x 9-inch pan.
In another bowl beat together until smooth the Ricotta cheese, vanilla, sugar and eggs. Pour over the cake.
Place in a 350Β° oven and bake for 1 hour and 15 minutes.
Remove from oven and cool.
Combine Cool Whip and almond extract; blend.
Spread over cooled cake.
