Rice Stroganoff is an moderately easy dinner. Made with 2 tsp. margarine, 1 c. sliced mushrooms, 1/4 c. sliced scallions, 1 garlic clove, minced and 3/4 c. chicken broth, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

A 2-quart saucepan, melt margarine.

Add mushrooms, scallions and garlic and saute over medium heat until mushrooms are just tender, 1 to 2 minutes.

Add remaining ingredients except rice and sour cream and bring mixture to a boil. Add rice and stir to combine.

Reduce heat to low, cover and cook until liquid is absorbed and rice is tender, 10 to 15 minutes.

Stir in sour cream and serve immediately.

Healthy. Makes 4 servings with 160 calories per serving.
