Rice Pilaf
Rice Pilaf is an moderately easy dinner. Made with 1 c. uncooked rice, 1 3/4 c. chicken broth, boiling, 1/2 c. chopped green pepper, 1/2 c. chopped onion and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

In saucepan melt butter.
Add green pepper and onion.
Saute until onion is transparent.
Add rice.
Stir until rice is coated with butter.
Add broth; bring mixture to a boil.
Turn heat down; cover.
Simmer for 1/2 hour, stirring after the first 15 minutes to distribute vegetables.
Serves 4.
