Rice Lasagna
Rice Lasagna is an moderately easy dinner. Made with 1 lb. ground beef or turkey, 1/2 c. chopped onion, 1 (30 oz.) jar prepared spaghetti sauce, 1 (15 oz.) container low-fat part skim ricotta or cottage cheese and 2 c. (8 oz.) shredded low-fat part skim mozzarella cheese, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Heat oven to 350°.
Spray a 9 x 13-inch pan with nonstick cooking spray.
In medium skillet, brown beef and onion; drain. Stir in spaghetti sauce; mix well.
In small bowl, combine Ricotta cheese, Mozzarella cheese and egg whites; mix well.
In the prepared pan, spread 1/3 of meat sauce, 1/2 of rice and 1/2 of Ricotta cheese mixture; repeat layers.
Spread remaining sauce on top; sprinkle with Parmesan cheese.
Bake at 350° for 30 to 35 minutes or until hot and bubbly.
Let stand for 10 minutes before serving.
Yields 8 servings.
