Rice Creole Dish
Rice Creole Dish is an moderately easy dinner. Made with 2 onions, chopped, 1 bell pepper, chopped, 2 large stalks celery, chopped, 3 c. red ripe tomatoes, chopped (fresh or canned) and 1 c. brown rice, washed, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Saute onions in olive oil until golden brown. Add bell pepper and celery. Saute briefly. Add tomatoes. Cover; simmer until tomatoes become liquified. Add rice, lemon juice, basil and seasonings. Bring to a boil; lower heat.
Cover and simmer 45 minutes. Add cheese on top. Melt cheese under broiler or replace lid and let cheese melt through.
