Rice Con Queso
Rice Con Queso is an moderately easy dinner. Made with 3 c. cooked rice, 1 can black beans, drained, 3 cloves minced garlic, 1 large chopped onion and 1 small chopped green chili, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Mix together rice, beans, garlic, onion and chili.
Set aside. Mix together Jack and Ricotta cheeses; thin with yogurt or milk until spreadable.
Repeat layers of rice and bean mixture, then cheese mixture, ending with rice mixture, in a casserole.
Top with grated Cheddar cheese and black olives.
Bake at 350Β° for 30 minutes, until browned and bubbly.
Or can bake in microwave for approximately 15 minutes on "High."
