Rice Casserole
Rice Casserole is an impressive dinner. Made with 1 qt. sliced fresh zucchini, 1 lb. lean ground beef, 1 c. chopped onions, 1 clove garlic, crushed and 1 (8 oz.) can tomato sauce, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Cook zucchini in boiling salted water about 2 or 3 minutes. Drain.
Saute meat, onions, garlic and seasoning until onions are transparent.
Stir in rice and tomato sauce.
Blend cottage cheese and egg.
Arrange half of zucchini slices in a buttered shallow pan (2-quart casserole).
Spoon mixture over zucchini, then arrange rest of zucchini on top.
Place in 350Β° oven for 20 to 25 minutes or until bubbly.
