Rice Balls
Rice Balls is an moderately easy dinner. Made with 1 1/2 c. rice, 3 eggs, 1/2 c. parmesan cheese, bread crumbs and olive oil, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Boil rice.
When almost dry, add eggs, pepper and parsley. Let cool.
Shape balls and roll in crumbs.
Fry in olive oil until brown.
