Rice and Fruit
Rice And Fruit is an moderately easy dinner. Made with 1/4 c. butter or margarine, 1 medium onion, chopped, 1 green pepper, chopped, 1 c. chopped celery and 1/4 lb. mushrooms, chopped, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Heat oven to 350Β°.
In medium saucepan, melt butter.
Stir in onion, green pepper, celery and mushrooms; cover.
Cook 5 minutes or until tender.
Stir in water and chicken bouillon cubes; heat until boiling.
Remove from heat; stir in rice, marjoram, salt and pepper.
Pour into greased 2-quart casserole; cover.
Bake 30 minutes or until rice is tender and liquid absorbed.
Stir in fruit cocktail or peaches.
Bake 15 minutes longer or until fruit is hot.
Makes 8 servings.
