Rhubarb Bar
Rhubarb Bar is an moderately easy dinner. Made with 3 c. rhubarb, 1/2 c. sugar, 1/4 tsp. vanilla, 1 1/2 c. oats and 1 1/2 c. flour, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cook first 3 ingredients, then set aside to cool.
Combine next 5 and stir cornstarch with water and add to oat mixture. Pour 3/4 of this mixture into lightly greased 9 x 13-inch baking dish.
Pour rhubarb on top, then put last 1/4 on top of rhubarb. Bake for 40 minutes at 350Β°.
Good plain, or with ice cream or whipping cream, hot or cold.
