Reuben Casserole
Reuben Casserole is an moderately easy dinner. Made with 8 slices pumpernickel or rye bread, cubed, 2 c. sauerkraut, drained, 1 c. corned beef, flaked, 1 c. sour cream and 1 medium onion, minced, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Butter a 9 x 13-inch pan.
Stir onion in sour cream.
Place half the bread in pan.
Top with sauerkraut, then corned beef, sour cream and half of the cheese. Top with remaining bread. Drizzle with melted margarine, then remaining cheese.
Bake at 350Β°, covered for 1 hour.
Uncover and bake for 10 to 15 minutes more.
