Reuben Casserole
Reuben Casserole is an moderately easy dinner. Made with 1 lb. sauerkraut, 2 medium tomatoes, sliced, 2 tbsp. thousand island dressing, 2 tbsp. butter and 1/2 c. corned beef, thinly sliced, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Spread sauerkraut in an 8 x 12-inch dish.
Top with sliced tomatoes.
Dot with butter and Thousand Island dressing.
Cover with corned beef.
Sprinkle with Swiss cheese.
Bake 15 minutes at 425°.
Remove from oven.
Split biscuits in half and place on top of cheese.
Sprinkle with crushed Rye Krisps and caraway seed. Bake at 425° for 20 minutes, until topping is brown.
