Refrigerator Pickles
Refrigerator Pickles is an moderately easy dinner. Made with 4 medium cucumbers, peeled and sliced, 1 1/4 tsp. salt, 1 1/4 c. sugar, 1 c. distilled white vinegar and 2 tsp. celery seed, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

In a colander, toss cucumbers and salt.
Place colander in sink or bowl and let drain for 2 hours.
Mix sugar, vinegar and celery seed in large bowl until sugar dissolves.
Add cucumbers, bell pepper and onion; toss to mix.
Spoon into clean jars.
Cover and refrigerate for 24 hours before serving.
Can be refrigerated for 4 months.
