Refrigerator Pickles
Refrigerator Pickles is an moderately easy dinner. Made with 3 qt. unpeeled, washed, thinly sliced cucumbers, 2 large onions, thinly sliced into rings, 1 large green pepper, cut into narrow strips, 1/3 c. salt and 2 c. white vinegar, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Mix all ingredients in a large glass bowl.
Put into jars with tight covers.
Refrigerate for 2 weeks before using.
These will keep for 2 years in the refrigerator.
(A gallon sun tea jar works well if you have a glass one and enough room in the refrigerator.)
