Refrigerator Mashed Potatoes is an moderately easy dinner. Made with 5 lbs. potatoes, 2 (3 oz.) pkgs. cream cheese, 1 c. sour cream, 2 tsp. onion salt (more if you like) and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Cook peeled potatoes in boiling salted water until tender.
Drain. Mash until smooth (no lumps). Add remaining ingredients, and beat until light and fluffy.
Cool. Cover and place in refrigerator. May be used any time within two weeks.
To use, place desired amount of potatoes in a greased casserole. Dot with butter and bake at 350Β° about 30 minutes or until potatoes are heated through.
