Redneck Caviar
Redneck Caviar is an moderately easy dinner. Made with 2 c. black-eyed peas, cooked (or 2 cans), 2 medium onions, thinly sliced and diced, 1/8 tsp. dried red pepper, crushed (optional), 1/4 tsp. salt and 1/2 c. bell pepper, thinly sliced and diced, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Drain peas.
(Rinse if canned.)
Combine all ingredients and refrigerate, covered, overnight or longer.
Turn several times with slotted spoon to marinate.
If double or triple, reduce garlic and red pepper.
Remember that strong herbs have a "multiplier" effect.
