Red Snapper Victoria
Red Snapper Victoria is an impressive dinner. Made with 1 1/2 lb. red snapper, 1 (15 oz.) can tomato sauce, 1 (16 oz.) can stewed tomatoes, 1 medium onion, sliced and 1 bell pepper, chopped, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Saute garlic lightly in oil; add vegetables and saute until onion is tender.
Add tomato sauce and stewed tomatoes; sprinkle all with seasonings.
Cover and simmer for 10 minutes to blend flavors.
Add snapper fillets, cut into serving size portions. Bring to boil; lower heat and simmer for 15 minutes or until fish is firm and flaky.
Can keep warm for 1 to 2 hours.
Serves 4 generously.
Good with cheese bread and salad.
Can also add scallops, shrimp or squid.
