Red Snapper Citrus
Red Snapper Citrus is an moderately easy dinner. Made with 1/2 c. onion, finely chopped, 1/2 c. orange juice, strained, 2 tsp. orange rind, finely grated, 1 tsp. salt and 4 (8 to 10 oz.) red snapper fillets, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Preheat oven to 400Β°.
Combine onion, orange juice and orange rind and salt.
Marinate fillets in mixture for about 30 minutes. Drain and bake, flesh side up, for about 12 minutes or until done. Just before baking, sprinkle each fillet lightly with nutmeg and pepper.
Serve immediately.
Yields 4 servings.
