Red Bean Lasagna
Red Bean Lasagna is an impressive dinner. Made with 1 c. chopped onion, 1 medium carrot, chopped, 1 clove garlic, minced, 2 tbsp. cooking oil and 1 (16 oz.) can tomatoes, cut up, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cook onion, carrot and garlic in oil.
Add undrained tomatoes, beans, parsley, sugar, oregano, basil and salt.
Bring to boil. Cover and simmer 15 minutes.
Add slightly mashed bean mixture with mushrooms and simmer uncovered for 15 minutes.
Combine egg with half of the 3 cheeses.
Spread 1/2 cup bean mixture in a 10 x 6 x 2-inch dish.
Arrange two noodles atop.
Spread with 1/3 cheese mixture, then with 1/3 bean mixture.
Repeat layers twice. Bake covered in 375Β° oven 40 minutes.
Top with remaining cheese and bake 5 minutes.
Makes 6 servings.
