Ratatouille
Ratatouille is an moderately easy dinner. Made with 2 lb. tomatoes, peeled and chopped, 1/2 c. oil, 3 medium onions, thickly sliced, 3 cloves garlic, minced and 2 red peppers, cut in sq., this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Heat 1/2 the oil and simmer the tomatoes for 10 minutes.
In another frypan, heat the remaining oil and saute the onions and garlic for 5 minutes.
Add the pepper, zucchini and eggplant to the onions.
Cook over a low heat for 15 minutes, stirring frequently.
Add the tomatoes, salt and pepper to taste and a pinch of sugar.
Cook until vegetables are tender.
