Ratatouille
Ratatouille is an moderately easy dinner. Made with 1 small eggplant, unpeeled and diced, 2 medium zucchini, unpeeled and diced, 1 green pepper, chopped, 2 medium onions, chopped and 3/4 c. olive oil, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Salt and drain eggplant on paper towel for 20 minutes.
Saute eggplant, zucchini, pepper and onions in olive oil until lightly browned.
Stir in tomato, salt, basil and pepper. Transfer to a casserole dish.
Bake at 325Β° for 1 1/2 hours or cook on top of stove in heavy pot.
Top with cheese, bake another half hour.
