Ratatouille
Ratatouille is an moderately easy dinner. Made with 2 tomatoes, cut in wedges, 1/2 tsp. thyme, 1 onion, sliced, 1 green pepper, cut in strips and 2 c. eggplant, peeled, sliced and cut in strips, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Sprinkle tomatoes with thyme.
Let stand. Saute remaining vegetables and garlic until barely tender. Add bay leaf.
Pour into nonstick casserole. Arrange tomato wedges on top.
Sprinkle with cheese and black pepper. Bake at 350Β°, covered, 30 minutes. Remove bay leaf before serving. Serves 8. Contains 48 calories per serving and 1 gram fat.
