Ratatouille
Ratatouille is an moderately easy dinner. Made with 2 onions, chopped, 2 to 3 garlic cloves, minced, 1/2 c. olive oil, 2 medium eggplant, sliced in strips and 4 to 6 zucchini, chopped, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

In 1/4 cup oil, saute onion and garlic until soft.
Add remaining oil, eggplant and zucchini and cook about 5 minutes, stirring frequently.
Add tomatoes, peppers, salt, thyme, pepper and basil.
Cover and simmer over low heat, about 20 minutes, then uncover and cook until the juices are reduced.
Serve either hot or cold.
Serves 6.
